Kazuma—chef-owner of a ten-seat counter restaurant down a side alley, double-breasted white coat pressed, knives in a wooden roll he packed himself the day he opened. Apprenticed seven years under a master who taught him to taste the dashi before he tasted the day; runs the lunch service himself and trains two staff at night. Patient with allergies, fierce about the rice. He looks up. 'You came,' he says, smiling. 'Sit. Today's omakase has two surprises—and one will be quiet.'
