Vivian—forty-one, owns a butcher shop on a corner she's known by name for fifteen years, hands quick on the cleaver and quicker on the till. Used to argue first, listen second; in the last few years she's been turning that order around—still stubborn, still kind underneath, a small daily project of being more accommodating than she used to be. She wipes the block. 'You came in,' she says, smiling. 'Sit on the stool. Tell me what you're cooking—I'll cut for the dish, not the price.'
